Scientists from the Silesian University they isolated the yeast used for beer production – Training In Poland (PAP)

Young scientists from the Silesian University in Katowice they isolated from apples yeast strain, which was then used in the production of craft beer BioWar. The authors of the project also plans wider use of these yeasts in industry.

the BioWar Project was carried out by scientists from the Faculty of Biology and environmental Protection University of Silesia within the framework of the Interdisciplinary Scientific circle of Naturalists “planet”. The leadership of the University on Wednesday during a press conference emphasized that this is a great example of the cooperation of the University with the economy and evidence of their support of student creativity.

One of the project participants Michael Krzyżowski, which is a home brewer, questioning together with friends over the insulation from the environment the yeast and their application in industry. So, two years ago, was born the project for which young scientists have convinced educators and the structure of the University.

the initiators of the project was then in the last year of the course, so work was suspended. The idea came back after a year when Krzyżowski was already a graduate student. I began work with colleagues under the supervision of the research of Dr. Slawomir Sułowicza and master Stepan Borymskiego.

Scientists took a swab from fruits such as apples and mangoes, with which the lab namnażali and izolowali yeast that poradziłyby itself in a relatively high concentration of alcohol. The project involved several dozen people, who for hundreds of hours mankind has deepened and widened 60 strains by checking their profile morphological and flavoring. After the analyses for the final test chose the three most promising of which was chosen by one strain, from Polish apples.

he was transferred to the brewery crafts ReCraft, who supported the scientists by sharing their knowledge, fresh ingredients and equipment. Assistance was also provided by representatives of the Polish Association of Home Brewers and the company ZFM, which helped to create a prototype of the bioreactor required for namnożenia more yeast.

Beer BioWar was made in one series, no longer produced, although scientists do not exclude the production of other Beers using the same strain. They also have plans for a more widespread use of yeast. The range of application is very large.

“Yeast can be widely used, for example, in the diet as they are rich source of micro and macronutrients. They are also used in the manufacture of creams – they are healthy for the skin, they have a lot of vitamin D, which is easy wchłanialna," said Krzyżowski.

Vice-Rector of the Silesian University for the training of students of Professor Richard Goat emphasized that the project BioWar is a perfect model of scientific work and education, but the broader thinking about the fact that science can be useful outside of the University. We are talking about the fact that research does not end at the University, but their results were later used in industry. He recalled that fails too frequently.

“and It is wonderful that there are people in business who want to experiment with students. This is a rare situation that someone wants to play in science by providing space, equipment, people of knowledge, so that students could verify that this can be done,” said the Professor. Goat.

the Brewer from the brewery ReCraft Alexander Stefaniuk underlined that the creation of students is unique for two reasons. First, it is not easy to pick out from among the yeasts that can be used in the beer production process, they must perform many functions. In practice, most Beers corporate use only one yeast species.

“on the other hand, very interesting to the winemaker is the beer which has yeast, which nobody ever used. It is quite dangerous for the brewing process, which is not really known what to expect at a large scale," said Stefaniuk and added that consumption scientists the yeast was very effective and provide interesting flavors.

associate Professor Maria Augustyniak Department of Biology and environmental Protection University of Silesia pointed out that the project BioWar is an example of close cooperation between the student and the academic teacher. “The product was created in collaboration with the environment, we, the teachers on their end, we called the +isotonic liquid with the element birthday+. This product is well characterized by us with the Department – is the product interesting, with good bouquet, and also has the right note of bitterness," she said.

will be able to make a drug beer BioWar and participation in the uprising of the prototype of the bioreactor are not the only achievements of the student teams. The other is the development of procedures for isolation and characteristics of yeasts from the environment, which subsequently can be used in industry, as well as participation in shows at the Science Festival and a scientific conference.(PAP)
